Vaulted Cellars
Let us introduce ourselves: we are the 5 Vaulted Cellars on the ground floor of Planto, representing the Earth element and its nurturing quality, gently caring for life. Our glass walls showcase carefully preserved and displayed foods to delight your senses. We are like the cellars of ancient times, with our raw earth vaults and soil floors, made from excavation materials, and our handcrafted local wood shelves. In this way, we optimally preserve all our treasures to maintain their flavors and health benefits. What are these treasures? Fruits, vegetables, meat products, dairy products, and wine—enough to create a sumptuous feast! And to top it off, the crates holding our fruits are made from the wood of the corresponding fruit trees!
The aim of these 5 cellars is to showcase the basic products of our diet, to highlight the production work involved and to perpetuate the preservation methods that guarantee the very highest product quality. Thanks in part to the raw earth from the excavation materials, and the underground location on the north side, a constant temperature is guaranteed from the moment the food arrives and throughout storage, an essential condition for preserving the vitamins and nutrients in the products.
The vaulted cellar dedicated to vegetables is a good example: its architecture is made of mud bricks to reproduce as closely as possible the natural storage conditions found in caves. The permeable bricks encourage air exchange and allow vapour to diffuse evenly, ensuring optimum humidity levels by absorbing and releasing excess moisture as required, while consuming very little energy.
