Vinegar Cellar

Let me introduce myself : I am the Vinegar Cellar, a secret alchemical lair, hidden deep within Bovino. You can discover me by passing through the Natural cellar and opening an old wooden door, a silent witness to many stories. My world is intertwined with life itself, dedicated to creating the healthful elixir of this place: vinegar. I am nestled cozily within, providing the perfect conditions for microorganisms to transform apple and pear juice into this potion - and guess what, the same microorganisms exist within your own body as in this transformation process. You may uncover me, but only if you well-behave, for I reveal myself solely upon request to the masters of the site, who hold my one and only key.

This vaulted cellar, built using stone, gravel and raw earth from the excavation materials, produces vinegar from the fruit of the site's tall apple and pear trees. The juice is stored in oak barrels, into which micro-organisms are added to transform it into vinegar. The room must be kept at 30 degrees to activate the work of these micro-organisms, which is made possible by its location next to the site's heating system. The atmosphere is as mysterious as it is warm!

This health vinegar serves as a basis for working with medicinal plants, prepared in the form of maceration. It's exciting to realise that it's some of the same micro-organisms that exist in the soil and in the human body that do the work of transforming them into vinegar, and that are vital for good health. This beverage helps to support the intestinal flora and is a real booster of immunity and vitality. It can be used instead of a mother tincture in a health cure and/or in cooking.
